MEDITERANEAN dishes used to develop your cooking skills.

You will be armed with all the skills and techniques you need to deliver the most delicious winter dishes.

  • All classes are for small group of 3.

  • Recipes included.

The Menu

Week 1

  • A WHOLE STANDING BAKED FISH and how to serve it.

  • A CARPARCCIO OF BEEF

  • EXCELLENT POTATO SALAD

  • VEGETARIAN & VEGAN OPTION SIDE SALAD

  • SUMMER PUDDING

Week 2

  • THE ROASTED GOOSE with its natural jus

  • FRESHLY SMOKED TROUT

  • WRINKLED APPLE STUFFING IN A PAPER BAG including vegetarians

  • BITTER GREEN SALAD WITH HOT RASPBERRY VINAIGRETTE

  • MINI PAVLOVA

Week 3

  • SLOW ROASTED TURKEY BREAST with its natural jus and BREAD SAUCE.

  • PRAWN & OYSTER COCKTAIL

  • A TANGLE OF BABY ROASTED VEGETABLES

  • SAUTE OF SPICED GREENS WITH CHICKPEAS

  • APEROL & PROSECCO JELLY WITH HOMEMADE ICECREAM

Tame Family Meal Times

Winter Workshop

This is a class that would work well for a small group of friends who are in the same dilemma. I can help you organize your group in your home so each cook gets a chance to share their particular problems and we can come up with some solutions. Your actual kitchen set up may be hindering your cooking and at the same time cook and practice these new principles.

I could “Kondo” each kitchen.

 Rarely around the dinner table?

Sport, Music etc means the kids and adults arriving home at different times? There is a solution, a specific plan devised by chefs that you can put into practice.

It’s not a miracle cure but with practice you will have a specific process that will save cooking multiple meals. Sorry folks you will still have to cook!!

There is a system that can be adapted to all Mums and Dads to take some of the stress out of meal times.

Lucindafood is all about finding the food you love to eat and giving you the strategies that don’t require a recipe, just your engagement and a willing attitude.

Mediteranean style menus, governed by the seasons where you are in the drivers seat with a fabulous mise en place ready to go.

You may even be training your kids how to cook without really trying as you won’t be stressing out and making eating and cooking look like a trial by fire.

Simple processes, methods, techniques and new skills is what Lucindafood is all about.

Not all dishes will have a recipe because they are simple new techniques and skills. Recipes will be available but you will take home the new skills in bullet point. Recipes get forgotten but muscle memory builds up so you remember the actions, your palate will be on the ball and alive to flavour, textures and you will be tasting tasting tasting until the dish is the food you love to eat.

  • In my kitchen, Brighton East, Melbourne

  • All levels of experience welcome.

  • A SPECIAL DAY FOR TEENAGERS, 13+.

  • Recipes for all dishes but no menu so it’s a surprise!….( DOH! If you have to know I’ll tell you!!)

  • Bring an apron and a sharp knife-if possible

The format is simple as I am on holidays as well so it’s what we want to cook. No set menu but here is the outline:

MALLEE ROOT CHARCOAL BBQ

  • With some meaty protein

  • How to light and use real charcoal

SOURDOUGH BREAD ROLLS

  • Made from scratch

  • Your own starter to take home

A MAD COLLECTION OF SUMMER VEGETABLES

  • Salads, full dishes, layers and layers of simple perfection

  • prepared however we like

MEDITERRANEAN INGREDIENTS

  • So must include, lentils, legumes and other fun stuff so vegetarians

    can join us. I run an inclusive kitchen.

MISCELLANEOUS

  • Perhaps another grain or even pasta if the group so desires.

  • A dessert- if weather permits so something cool and fresh

This is how I love to cook and teach.

Through doing, tasting, testing, enjoying and most of all sharing. This is how we become better cooks and love it more.

No rules (except the important ones), just skills, techniques and an open attitude for you to cook the food you love to eat.

A cooking class is often not exactly what’s needed for that stubborn problem in your kitchen or your cooking life.

I don’t think there is a problem that I haven’t experienced myself so let me come to your kitchen and lets solve this issue together.

Nothing is too small, complex, annoying or just plain frustrating for us to focus on.

  • Planning meals that suit you and their shopping lists

  • Kitchen just out of control, too much old stuff, not the right gear that works well.

  • A special event that is causing anxiety and stress. Complete planning and support so you can enjoy your special occasion.

  • Old family dishes that need de-coding from a hand-written recipe so you can re-create family favourites.

  • Knife sharpening and using your knife for clever cutting.

  • A Magimix, Kitchen Aid, Vitamix you don’t know how to use.

This is one-on-one kitchen advice that can really open up new skills, a more relaxed attitude and better cooking for you and your family.
